The term “shortcake” refers to a cake made with “shortening,” often in the form of butter or lard, which lends a delicate crumb to the baked goods.

Strawberry Shortcake truly came into its own during the mid-19th century when strawberries became more widely cultivated. With the introduction of more accessible and bountiful strawberries, the dessert gained popularity and earned its rightful place as a summer staple.

INGREDIENTS

  • 3 cupfuls flour
  • 1/2 cupful Crisco (shortening)
  • 1/2 teaspoonful salt
  • 3 teaspoonfuls baking powder
  • 1 egg
  • 2 tablespoonfuls sugar
  • 1 cupful milk
  • 1-1/2 pints strawberries
  • 1 cupful whipped cream

 

INSTRUCTIONS

Creating the Cake Layers:

  1. Sifting Dry Ingredients: Sift the flour, baking powder, salt, and sugar together in a bowl.
  2. Incorporating Crisco: Cut in the Crisco using a knife until the mixture resembles coarse crumbs.
  3. Adding Wet Ingredients: Add the well-beaten egg and milk to the mixture. Mix until the dough comes together into a soft consistency.
  4. Rolling and Baking: Roll out the dough into two layers. Spread the layers in two greased pans and bake in a hot oven until they turn a light brown color.

 

Assembling the Strawberry Shortcake:

  1. Preparing Strawberries: Mash and sweeten one cupful of the strawberries. Use this mixture to spread over one cake layer.
  2. Layering: Place the second cake layer on top of the strawberry-covered layer.
  3. Sweetening Strawberries: Sweeten the remaining strawberries and spread them over the top cake layer.
  4. Adding Whipped Cream: Cover the strawberries with a generous layer of whipped cream.
  5. Decorating: For a finishing touch, decorate the Strawberry Shortcake with whole ripe strawberries, adding visual appeal and showcasing the star ingredient.
