INGREDIENTS:

  • 1 1/2 cups Rhubarb (diced)
  • 1 1/2 cups Strawberries (sliced)
  • 1/4 Navel Orange (juiced)
  • 1/4 cup Maple Syrup (divided)
  • 2 tablespoons Coconut Flour (divided)
  • 1/2 cup Pecans (chopped)
  • 1/3 cup Almond Flour
  • 1/2 teaspoon Cinnamon
  • 1/8 teaspoon Sea Salt
  • 2 tablespoons Coconut Oil (melted)

 

INSTRUCTIONS:

  1. PREHEAT OVEN: Preheat the oven to 350ºF (180ºC).
  2. MIX FRUIT FILLING: In a bowl, combine the diced rhubarb, sliced strawberries, orange juice, half of the maple syrup, and half of the coconut flour. Mix well until the fruit is well coated.
  3. PREPARE PECAN TOPPING: In a separate bowl, mix together the chopped pecans, almond flour, cinnamon, sea salt, melted coconut oil, and the remaining maple syrup and coconut flour. Stir until the mixture is well combined.
  4. GREASE RAMEKINS: Lightly grease ramekins (small baking dishes).
  5. ASSEMBLE: Divide the fruit mixture evenly among the greased ramekins. Then, crumble the pecan topping evenly over the fruit filling.
  6. BAKE: Place the ramekins in the preheated oven and bake for 20 to 25 minutes, or until the topping is golden brown and bubbling.
  7. COOL AND SERVE: Remove the ramekins from the oven and let them cool for about 5 minutes before serving. Enjoy this delicious fruit crumble!
