Strawberry Rhubarb Chia Parfait

INGREDIENTS:

  • 2/3 cup Chia Seeds
  • 2 cups Unsweetened Almond Milk
  • 1 tbsp Raw Honey
  • 2 cups Rhubarb (diced)
  • 3 cups Strawberries (diced)

 

INSTRUCTIONS:

  1. Combine the chia seeds, almond milk, and honey together in a bowl and mix well until all clumps are dissolved. Cover and let sit in the fridge for 4 hours or until thickened.
  2. Preheat the oven to 350ºF (177ºC). Place the rhubarb and strawberries together in a glass baking dish and bake in the oven for 30 minutes. Remove from the oven and set aside to cool.
  3. To make parfaits, set out mason jars (we use size 250 mL), layer in chia seed pudding and use a slotted spoon to add the strawberry rhubarb mix. Repeat to create layers.
  4. Enjoy!

 

Notes:

  • Storage: Store in the fridge for up to 5 days.
  • No Rhubarb: Use diced apple instead.

  2. Chocolate Chia Seed Pudding: Add cocoa powder or chocolate protein powder to the chia seed mixture for a rich chocolate flavor. Top it with fresh raspberries or sliced bananas.
  3. Matcha Chia Seed Pudding: Mix matcha powder into the chia seed mixture for a vibrant green color and subtle tea flavor. Top it with sliced strawberries or kiwi.
  4. Blueberry Lemon Chia Seed Pudding: Add fresh blueberries and lemon zest to the chia seed mixture. Drizzle some honey on top for extra sweetness.
  5. Peanut Butter Banana Chia Seed Pudding: Mix in some peanut butter with the chia seed mixture and layer it with sliced bananas. Top with crushed peanuts for added crunch.
  6. Vanilla Berry Chia Seed Pudding: Use vanilla-flavored almond milk and top the pudding with a mix of berries like raspberries, blackberries, and blueberries.
  7. Pumpkin Spice Chia Seed Pudding: Mix pumpkin puree and pumpkin spice into the chia seed mixture. Top it with a dollop of whipped cream and a sprinkle of cinnamon.
  8. Cinnamon Apple Chia Seed Pudding: Stir in diced apples and ground cinnamon into the chia seed mixture. Add a drizzle of maple syrup on top.
  9. Honey Almond Chia Seed Pudding: Instead of using maple syrup, sweeten the pudding with honey and add sliced almonds for extra texture.
  10. Mango Coconut Lime Chia Seed Pudding: Combine diced mango, shredded coconut, and lime zest into the chia seed mixture. Squeeze a little lime juice on top before serving.
