Strawberry Coconut Overnight Oats

INGREDIENTS:

  • 1 1/2 cups Oats (quick)
  • 1 1/2 cups Canned Coconut Milk
  • 2 tablespoons Chia Seeds
  • 1 tablespoon Maple Syrup
  • 3/4 cup Water
  • 2 cups Strawberries (sliced)
  • 1/4 cup Hemp Seeds

 

INSTRUCTIONS:

  1. COMBINE INGREDIENTS: In a large glass container, combine oats, coconut milk, chia seeds, and maple syrup. Stir well to evenly mix. Add water and continue stirring until everything is thoroughly combined.
  2. STORE IN FRIDGE: Cover the container and store it in the fridge overnight to allow the flavors to meld and the oats to soften.
  3. ASSEMBLE INDIVIDUAL JARS: Use single-serving size jars (250 mL or 500 mL in size) and place a few spoonfuls of the overnight oat mixture in the bottom of each jar.
  4. LAYER WITH STRAWBERRIES: Add a layer of sliced strawberries on top of the oat mixture in each jar.
  5. SPRINKLE WITH HEMP SEEDS: Sprinkle hemp seeds over the strawberries in each jar.
  6. REPEAT LAYERS: Repeat the layers with more oat mixture, strawberries, and hemp seeds until all the ingredients are used up. You can create multiple layers for an appealing presentation.
  7. REFRIGERATE: Seal the jars and store them in the fridge for up to 4 days or until ready to eat. The oats will continue to absorb the liquid and soften as they sit in the fridge.

 

Notes:

  • LEFTOVERS: If you have any leftovers, refrigerate them in an airtight container for up to four days.
  • WARM IT UP: If you prefer warm oats, you can heat the jar in the microwave for 30 to 60 seconds before eating.
  • MORE PROTEIN: To increase the protein content, consider adding extra hemp seeds to the mixture.
