INGREDIENTS:

  • 2 cups Unsweetened Almond Milk
  • 2 cups Strawberries (chopped, divided)
  • 1 1/2 tablespoons Maple Syrup
  • 1/2 teaspoon Vanilla Extract
  • 1 cup Rolled Oats
  • 1 tablespoon Chia Seeds (optional)

 

INSTRUCTIONS:

  1. Add the almond milk, half of the strawberries, maple syrup, and vanilla to a high-speed blender. Blend until smooth. Season with additional vanilla and maple syrup if needed.
  2. Transfer the strawberry milk to a saucepan over medium heat and stir in the oats. Bring to a gentle boil and cook, stirring occasionally for 8 to 10 minutes or until the oats are tender and creamy. Stir in the remaining strawberries and chia seeds, if using, and let it cook for another minute.
  3. Serve immediately and enjoy!

 

NOTES:

  • Leftovers: Refrigerate in an airtight container for up to five days. Reheat with extra almond milk if needed.
  • Additional Toppings: Serve with additional chopped strawberries, extra chia seeds, or a drizzle of almond butter.
  • No Fresh Strawberries: Use frozen strawberries instead. Cooking time may vary with frozen strawberries.

 

Here are some variations of the strawberry oatmeal recipe:

  1. Blueberry Bliss: Replace half of the strawberries with blueberries for a delightful twist. You can also add a splash of lemon juice to enhance the flavor.
  2. Peanut Butter Power: Stir in 1-2 tablespoons of peanut butter while cooking the oats for a creamy and nutty flavor. Top with sliced bananas for added sweetness.
  3. Coconut Dream: Use coconut milk instead of almond milk for a tropical flavor. Add shredded coconut and sliced mangoes as toppings.
  4. Chocolate Strawberry Indulgence: Mix in 1-2 tablespoons of cocoa powder for a chocolatey kick. Top with chocolate chips and fresh strawberries.
