Spinach originated in Asia, so stir-frying it is a very traditional way of preparing it.
Yield: 6 servings, each with 6 grams of carbohydrates and 4 grams of fiber, for a total of 2 grams of usable carbs and 4 grams of protein.
INGREDIENTS
- 1/4 cup peanut oil
- 2 pounds fresh spinach, washed and dried
- 2 cloves garlic, crushed
INSTRUCTIONS
- Heat the oil in a heavy skillet or wok over high heat.
- Add the garlic and spinach to the skillet.
- Stir-fry for only a minute or two, until the spinach is wilted but still bright green.
- Serve immediately.
