Stir Fried Spinach

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Spinach originated in Asia, so stir-frying it is a very traditional way of preparing it.

Yield: 6 servings, each with 6 grams of carbohydrates and 4 grams of fiber, for a total of 2 grams of usable carbs and 4 grams of protein.

 

INGREDIENTS

  • 1/4 cup peanut oil
  • 2 pounds fresh spinach, washed and dried
  • 2 cloves garlic, crushed

 

INSTRUCTIONS

  1. Heat the oil in a heavy skillet or wok over high heat.
  2. Add the garlic and spinach to the skillet.
  3. Stir-fry for only a minute or two, until the spinach is wilted but still bright green.
  4. Serve immediately.
