- ¾ cup canola oil
- 1 medium onion, finely chopped
- 2 tablespoons Cajun seasoning
- 6 garlic cloves, minced
- 2 teaspoons ground cumin
- 1 teaspoon minced fresh rosemary
- 1 teaspoon minced fresh thyme
- 2 pounds uncooked large shrimp, peeled and deveined
FOR SPICY BUTTER:
- 1 cup butter, cubed
- 1 teaspoon minced fresh basil
- 1 teaspoon minced fresh tarragon
- 1 teaspoon Cajun seasoning
- ½ teaspoon garlic powder
- 3 drops hot pepper sauce
INSTRUCTIONS
- In a small bowl, combine the canola oil, finely chopped onion, Cajun seasoning, minced garlic cloves, ground cumin, minced fresh rosemary, and minced fresh thyme.
- Place the peeled and deveined shrimp in a large resealable plastic bag.
- Add half of the marinade to the bag, seal it, and turn the bag to coat the shrimp.
- Refrigerate the bag with the shrimp and marinade for 1-2 hours.
- Cover and refrigerate the remaining marinade for basting later.
- In a small saucepan, combine the cubed butter, minced fresh basil, minced fresh tarragon, Cajun seasoning, garlic powder, and hot pepper sauce.
- Heat the saucepan until the butter is melted.
