INGREDIENTS
- 6 cloves garlic, mashed
- ½ cup fresh cilantro, chopped
- 1 tsp paprika
- 1 tsp cayenne pepper
- Salt and pepper
- 2 tbsp olive oil
- 2 tbsp peanut oil
- 6 baking potatoes (russets), sliced into wedges
INSTRUCTIONS
- Preheat the oven to 400°F.
- In a small bowl, mix the mashed garlic, cilantro, paprika, cayenne, salt, pepper, and oil.
- Place the potato wedges in a large shallow baking pan.
- Pour the spicy dressing all over the potatoes.
- Use your hands to coat them well and spread them out.
- Roast the potatoes in the oven until they’re crisp and golden brown.
- Flip and shake the wedges periodically so that they brown evenly.
- Serve as a perfect side dish with anything.
