Spicy Roasted Potato Wedges

INGREDIENTS

  • 6 cloves garlic, mashed
  • ½ cup fresh cilantro, chopped
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • Salt and pepper
  • 2 tbsp olive oil
  • 2 tbsp peanut oil
  • 6 baking potatoes (russets), sliced into wedges

 

INSTRUCTIONS

  1. Preheat the oven to 400°F.
  2. In a small bowl, mix the mashed garlic, cilantro, paprika, cayenne, salt, pepper, and oil.
  3. Place the potato wedges in a large shallow baking pan.
  4. Pour the spicy dressing all over the potatoes.
  5. Use your hands to coat them well and spread them out.
  6. Roast the potatoes in the oven until they’re crisp and golden brown.
  7. Flip and shake the wedges periodically so that they brown evenly.
  8. Serve as a perfect side dish with anything.
