INGREDIENTS

  • 2 medium carrots, chopped
  • 1 small onion, chopped
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 large sweet potato, peeled and cubed
  • ½ cup chunky peanut butter
  • 2 tablespoons red curry paste
  • 2 cans (14½ ounces each) vegetable broth
  • 1 can (14½ ounces) fire-roasted diced tomatoes, undrained
  • 1 bay leaf
  • 1 fresh thyme sprig
  • ½ teaspoon pepper
  • ½ cup unsalted peanuts

 

INSTRUCTIONS

  1. In a large saucepan, cook chopped carrots and onion in olive oil over medium heat for 2 minutes.
  2. Add minced garlic to the saucepan and cook for an additional 1 minute.
  3. Stir in the cubed sweet potato and cook for 2 minutes longer.
  4. Add chunky peanut butter and red curry paste to the mixture, and blend until well incorporated.
  5. Pour in the vegetable broth and add the undrained fire-roasted diced tomatoes, bay leaf, fresh thyme sprig, and pepper.
  6. Bring the soup to a boil, then reduce the heat, cover, and simmer for 15-20 minutes or until the sweet potatoes and carrots are tender. (the soup may appear curdled at this stage.)
  7. Remove and discard the bay leaf and thyme sprig.
  8. Stir the soup until well blended.
  9. Serve the spicy peanut soup hot, and sprinkle each serving with unsalted peanuts for added crunch and flavor.
