INGREDIENTS 

  • 4 strip steaks (approximately 10-12 ounces each), preferably USDA Prime or Choice grade
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 4 garlic cloves, minced
  • 1 tablespoon fresh rosemary leaves, finely chopped
  • 1 tablespoon fresh thyme leaves, finely chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (adjust to desired heat level)
  • Salt and freshly ground black pepper to taste

 

INSTRUCTIONS 

  1. In a large mixing bowl, whisk together the olive oil, balsamic vinegar, minced garlic, chopped rosemary, thyme, dried oregano, smoked paprika, red pepper flakes, salt, and black pepper to create the marinade for the strip steaks.
  2. Pat the strip steaks dry with paper towels, then place them in the bowl with the marinade. Ensure that the steaks are evenly coated with the mixture on both sides.
  3. Cover the bowl with plastic wrap or transfer the steaks and marinade to a resealable plastic bag, removing as much air as possible before sealing. Allow the steaks to marinate in the refrigerator for at least 1 to 2 hours, or preferably overnight, to enhance the flavors and tenderize the meat.
  4. Prior to grilling, take the marinated strip steaks out of the refrigerator and let them sit at room temperature for about 30 minutes to ensure even cooking.
  5. Preheat the grill to high heat, aiming for a temperature of around 450°F to 500°F (230°C to 260°C). Brush the grill grates with a bit of oil to prevent sticking.
  6. Remove the strip steaks from the marinade, shaking off any excess liquid, and let them rest for a few minutes. Season each steak generously with additional salt and black pepper to taste.
  7. Place the strip steaks on the hot grill and cook for approximately 4 to 5 minutes per side, or until the desired level of doneness is reached. For a medium-rare steak, the internal temperature should read about 130°F to 135°F (54°C to 57°C) on an instant-read meat thermometer.
  8. As the strip steaks cook, avoid flipping them too frequently to achieve a flavorful sear and caramelization on the exterior.
  9. Once the steaks are cooked to perfection, transfer them to a clean platter or cutting board and let them rest for about 5 minutes to allow the juices to redistribute throughout the meat.
  10. Slice the Special Strip Steaks against the grain to ensure tenderness and serve immediately for the ultimate grilling experience.
