INGREDIENTS
- 2 to 2½ pounds beef top round steak, cut into 1-inch cubes
- 2 tablespoons canola oil
- 2 large onions, chopped
- 2 garlic cloves, minced
- 1 can (15 ounces) enchilada sauce
- 1 can (14½ ounces) diced tomatoes, undrained
- 1 to 2 cans (4 ounces each) chopped green chilies
- 1 teaspoon salt
- ¼ teaspoon pepper
- 2 tablespoons all-purpose flour
- ¼ cup cold water
- 8 flour tortillas (10 inches)
- Optional toppings: diced tomatoes, sliced ripe olives, shredded cheddar cheese, sour cream, chopped green onions, shredded lettuce, and/or guacamole
INSTRUCTIONS
- In a large skillet over medium heat, brown the beef cubes in canola oil. Drain any excess oil.
- Add the chopped onions and minced garlic to the skillet. Cook and stir for 2 minutes until the onions become tender and the garlic is fragrant.
- Add the enchilada sauce, diced tomatoes (undrained), chopped green chilies, salt, and pepper to the skillet. Bring the mixture to a boil.
- Reduce the heat, cover the skillet, and simmer for 2 hours or until the beef is tender.
- In a separate bowl, combine the all-purpose flour and cold water to create a thickening agent. Stir the mixture into the beef mixture, constantly stirring until it thickens.
- Warm the flour tortillas and spoon approximately ½ cup of the beef filling off-center on each tortilla.
- Fold the sides and bottom of the tortilla over the filling, then roll it up to create a burrito.
- Spoon a little more of the beef filling over the top of the burritos.
