Soup Verte, translated as “Green Soup,” hails from the culinary traditions of France, a country renowned for its mastery of flavor and technique. INGREDIENTS

  • 4 tablespoonfuls flour
  • 3 tablespoonfuls Crisco (shortening)
  • 2 quarts stock (chicken or vegetable)
  • 1 bunch parsley
  • 1 lb. spinach
  • 1 teaspoonful sugar
  • 2 egg yolks
  • 1 lemon
  • Salt and pepper to taste

 

INSTRUCTIONS

  1. Begin by preparing the stock in a large saucepan. Allow the stock to heat over medium heat.
  2. Add the bunch of parsley and thoroughly washed spinach to the stock. Let these greens simmer in the stock for approximately twenty minutes, infusing their flavors.
  3. After simmering, strain the stock and greens, ensuring that you remove all solids. Use a sieve to rub the puree through, achieving a smooth and velvety consistency.
  4. Return the strained puree to the saucepan. Add the Crisco and flour, which have been mixed together with a cupful of water, to the puree. Also, add the sugar and the strained juice of a quarter of a lemon.
  5. Allow the mixture to boil gently for about five minutes, allowing the flavors to meld and the soup to thicken slightly.
  6. In a separate bowl, beat the egg yolks with 1/4 cupful of water, creating a smooth mixture.
  7. Gradually add the beaten egg yolks to the soup, stirring continuously. Take care to stir near the heat source but not directly on it to prevent curdling.
  8. Season the Soup Verte with salt and pepper to taste, ensuring a well-balanced flavor profile.
  9. Serve the Soup Verte, allowing the delicate and vibrant flavors to shine. As you enjoy each spoonful, embrace the elegance and sophistication that French cuisine brings to your table.
