INGREDIENTS:
- 1-1/2 lb pork loin
- 1 cup tomato sauce
- 2 zucchinis, sliced
- 1 head cauliflower, separated into medium florets
- 1-2 Tbs dried basil
- 1/4 tsp ground black pepper
- 1/2 tsp sea salt (optional)
INSTRUCTIONS:
- Place the pork loin, sliced zucchinis, and cauliflower florets in the crockpot.
- Pour the tomato sauce over the ingredients in the crockpot.
- Sprinkle the dried basil, ground black pepper, and sea salt (if using) over the top.
- Cover the crockpot with a lid and cook on high for 3-4 hours or on low for 7-8 hours.
- Once the pork is tender and cooked through, remove it from the crockpot and slice it.
- Serve the sliced pork with the cooked zucchinis and cauliflower. You can also pour some of the tomato sauce from the crockpot over the top for added flavor.
