INGREDIENTS

For Salad:

  • 1 can of shrimps
  • 1 cupful of celery cut in cubes
  • 1 cupful of tart apples cut in cubes
  • 1 cupful of broken Brazil nut meats
  • 1/2 cupful of broken English walnut meats
  • Salt and pepper to taste
  • Juice of 1 lemon

 

For Dressing:

  • 2 tablespoonfuls Crisco (vegetable shortening)
  • 4 tablespoonfuls vinegar
  • 2 tablespoonfuls water
  • 4 eggs
  • 1 teaspoonful dry mustard
  • 1 teaspoonful salt
  • 1 teaspoonful sugar
  • 1/2 teaspoonful white pepper
  • 1/2 cupful thick cream
  • 1 cupful whipped cream
  • Crisp lettuce leaves

 

INSTRUCTIONS

For Salad:

  1. Begin by breaking the shrimps into pieces and placing them in an earthenware dish. Moisten the shrimps with a little melted Crisco, and season them with vinegar, salt, and pepper. This step infuses the shrimps with a delicate blend of flavors.
  2. In a separate small dish, place the cubes of tart apples and sprinkle them lightly with lemon juice. Add the cubes of celery to the dish, tossing them together with a touch more lemon juice. Set aside.
  3. Prepare the broken Brazil nut meats and the broken English walnut meats, ensuring they are ready to be incorporated into the salad.

 

For Dressing:

  1. Heat 4 tablespoonfuls of vinegar and 2 tablespoonfuls of water in a double boiler.
  2. In a separate bowl, beat 4 eggs, then gradually add them to the vinegar and water mixture, stirring constantly.
  3. Incorporate 2 tablespoonfuls of Crisco and cook the mixture slowly, continuing to stir constantly.
  4. Remove the mixture from the heat and continue to beat until it cools.
  5. Add dry mustard, salt, sugar, and white pepper to the cooled mixture, enhancing the dressing with a balanced blend of flavors.
  6. Just before serving, add 1/2 cupful of thick cream to the dressing, creating a luscious and creamy texture.

 

Assembling the Salad:

  1. Toss together the prepared nuts, celery, apples, and shrimps with a silver fork, ensuring even distribution.
  2. Arrange crisp lettuce leaves on individual plates, creating a bed for the salad.
  3. Heap the mixture of nuts, celery, apples, and shrimps onto the lettuce leaves, creating an inviting and visually appealing arrangement.
  4. Drizzle a heaping spoonful of the prepared dressing over each salad, ensuring that the flavors meld and complement the salad components.
  5. Top each salad with a spoonful of unsweetened whipped cream, adding a touch of indulgence and contrasting texture to the dish.
