I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Nutty and filling! Make sure you chop your sunflower seeds, though, or they’ll mostly sink to the bottom of your loaf.

Yield: About 10 slices, each with 8 grams of carbohydrates and 2 grams of fiber, for a total of 6 grams of usable carbs and 21 grams of protein.

 

INGREDIENTS 

  • 1/2 cup warm water
  • 1/2 cup heavy cream
  • 1 tablespoon oil
  • 1 egg
  • 1/2 teaspoon salt
  • 3/4 cup vital wheat gluten
  • 1/2 cup oat bran
  • 1/3 cup ground almonds
  • 1/3 cup sunflower seeds, coarsely chopped
  • 1/4 cup rice protein powder
  • 2 tablespoons flaxseed
  • 1/2 teaspoon blackstrap molasses
  • 1 teaspoon Splenda
  • 2 teaspoons yeast

 

INSTRUCTIONS 

  1. Put the ingredients in your bread machine in the order given.
  2. Run the machine according to the manufacturer’s instructions.
  3. Once the cycle is complete, remove the loaf from the machine and bread case promptly to cool.

 

NOTE

  • This low-carb bread recipe is high in protein and fiber and makes for a tasty and healthy alternative to traditional bread.
