  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 2 cups beef or vegetable broth
  • 1 cup red wine (such as Cabernet Sauvignon or Merlot)
  • 2 sprigs of fresh rosemary
  • 4 sprigs of fresh thyme
  • 2 bay leaves

 

INSTRUCTIONS

  1. Preheat your oven to 325°F (163°C).
  2. Season the lamb shanks generously with salt and black pepper.
  3. In a large oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat.
  4. Sear the lamb shanks on all sides until browned. This step helps to develop a rich crust and enhances the flavors.
  5. Remove the lamb shanks from the skillet and set them aside.
  6. In the same skillet, add the chopped onion, carrots, celery, and minced garlic. Sauté until the vegetables become softened and lightly browned.
  7. Add the beef or vegetable broth and red wine to the skillet, scraping the bottom to release any flavorful bits.
  8. Return the lamb shanks to the skillet, nestling them among the vegetables and liquid.
  9. Place the rosemary sprigs, thyme sprigs, and bay leaves in the skillet, distributing them evenly.
  10. Cover the skillet or Dutch oven with a lid or aluminum foil and transfer it to the preheated oven.
  11. Bake the lamb shanks for approximately 2.5 to 3 hours, or until the meat is tender and falls off the bone. Baste the lamb shanks with the cooking liquid occasionally to keep them moist and flavorful.
