Sausage Egg and Cheese Bake

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Yield: 6 servings, each with 4 grams of carbohydrates, a trace of fiber, and 26 grams of protein.

 

INGREDIENTS

  • 1 pound pork sausage (hot or mild, as you prefer)
  • 1/2 cup diced green pepper
  • 1/2 cup diced onion
  • 8 eggs
  • 1/4 teaspoon pepper
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Swiss cheese

 

INSTRUCTIONS 

  1. Preheat the oven to 350°F.
  2. In a large, heavy, oven-proof skillet, start browning and crumbling the sausage over medium heat.
  3. When some grease has cooked out of the sausage, add the green pepper and the onion, and continue cooking, stirring frequently, until the sausage is no longer pink.
  4. In a large bowl, beat the eggs and pepper together, and stir in the Cheddar and Swiss cheeses.
  5. Spread the sausage and vegetables evenly on the bottom of the skillet, and pour the egg and cheese mixture over it.
  6. Bake for 25 to 30 minutes, or until mostly firm but still just a little soft in the center.
