  • 1 dozen sardines, boneless and skinned
  • 1 tablespoonful whipped cream
  • 1 tomato
  • Salt, pepper, and paprika to taste
  • Lettuce leaves
  • Slices of brown or white bread
  • Butter (for buttering the bread)

 

INSTRUCTIONS

  1. Begin by boneless and skinning the sardines, preparing them for the filling.
  2. Pass the boneless sardines through a sieve, creating a smooth and creamy base for the sandwich filling.
  3. Add whipped cream, melted Crisco, and the pulp of a tomato to the sieved sardines.
  4. Season the mixture with salt, pepper, and paprika to taste, enhancing the flavors and adding a touch of warmth.
  5. Mix the ingredients thoroughly until well combined, ensuring a consistent and flavorful filling.
  6. Take slices of brown or white bread and butter one side of each slice.
  7. Spread the sardine mixture generously onto the buttered side of the bread slices, creating a layer of rich and flavorful filling.
  8. Stamp out the bread slices in rounds using a circular cutter, ensuring uniform shapes for the sandwiches.
  9. In the center of each round of bread, pipe a row of whipped cream seasoned with salt and red pepper, adding a creamy and tangy contrast to the sardine filling.
  10. Place small stamped-out leaves of lettuce around the whipped cream row, creating a decorative and fresh garnish.
  11. Press the rounds of bread together gently, allowing the flavors and textures to meld.
