INGREDIENTS

  • 1 cup plus 2 tablespoons butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon almond extract
  • ½ teaspoon vanilla extract
  • 3 cups all-purpose flour

 

INSTRUCTIONS

  1. In a bowl, cream the softened butter and sugar together until well combined.
  2. Add the egg, almond extract, and vanilla extract to the bowl.
  3. Mix thoroughly to incorporate all the ingredients.
  4. Gradually add the all-purpose flour to the mixture, blending it in until you have a smooth dough.
  5. Cover the dough and chill it in the refrigerator for at least 1-2 hours or overnight. This step is essential as it helps the dough firm up, making it easier to work with.
  6. Preheat your oven to 375°F (190°C).
  7. Lightly grease the Sandbakkelse molds or ensure they are non-stick.
  8. Take about 1 tablespoon of chilled dough and press it into each Sandbakkelse mold, making sure to fill the entire mold evenly.
  9. Place the filled molds on a baking sheet and bake them in the preheated oven for 10-12 minutes or until the cookies appear set and start to brown slightly around the edges.
  10. Allow the cookies to cool in the molds for 2-3 minutes. This step helps the cookies retain their shape.
  11. When the cookies are cool enough to touch, carefully remove them from the molds.
  12. If the cookies are sticking, gently tap the molds with a knife and carefully squeeze the mold to release the cookies more easily.
  13. Now, your delightful Sandbakkelse (Sand Tarts) cookies are ready to be enjoyed! Serve them during festive occasions, with a cup of coffee or tea, or share them with loved ones to create lasting memories around this beloved Scandinavian treat.
