Serves :1

 

INGREDIENTS:

  • 1 cup of spinach
  • 1 cup of shredded cabbage, sauerkraut, or lettuce (Cabbage has more substance)
  • Italian or Yogurt dressing
  • Cayenne pepper (optional)
  • Few sprigs of cilantro (optional)

 

INSTRUCTIONS:

  1. In a mixing bowl, combine the spinach and shredded cabbage, sauerkraut, or lettuce.
  2. Drizzle Italian or Yogurt dressing over the greens according to your taste preferences. You can use store-bought dressing or make your own.
  3. For a spicy kick, add a pinch of cayenne pepper to the salad.
  4. If desired, garnish with a few sprigs of fresh cilantro for added flavor and visual appeal.
  5. Toss the salad gently to coat the greens with the dressing and distribute the flavors evenly.
  6. Serve immediately as a refreshing side dish or a light meal.

    • Replace the Italian or Yogurt dressing with a sesame ginger dressing made from sesame oil, rice vinegar, soy sauce, grated ginger, minced garlic, and a touch of honey.

    • Mix in some roasted red peppers, artichoke hearts, and pine nuts for a Mediterranean-inspired flavor.
    • Use a lemon-herb dressing with lemon juice, olive oil, minced garlic, dried oregano, basil, and a pinch of salt.

    • Add black beans, corn kernels, diced avocado, and chopped cilantro to the salad.
    • Dress with a lime-cilantro dressing made from lime juice, olive oil, chopped cilantro, minced garlic, a touch of cumin, and salt.
