- 1/2 cup (100g) granulated sugar
- 6 large eggs, separated
- 1 teaspoon vanilla extract
- 1/2 cup (60g) all-purpose flour
- 1/2 cup (100g) apricot jam
FOR THE CHOCOLATE GLAZE:
- 6 ounces (170g) bittersweet chocolate
- 1/2 cup (113g) unsalted butter
- 1/2 cup (100g) granulated sugar
- 1/2 cup (118ml) water
INSTRUCTIONS
FOR THE CAKE:
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch (23cm) round cake pan.
- In a heatproof bowl, melt the bittersweet chocolate over a pot of simmering water. Remove from heat and let it cool slightly.
