INGREDIENTS

  • 2 cupfuls flour
  • 1/2 cupful Crisco, generous measure
  • 1/2 teaspoonful salt
  • 1 teaspoonful lemon juice
  • 1 egg
  • Cold water

 

INSTRUCTIONS

  1. Ensure that the Crisco is cold and firm, an essential element for achieving flakiness.
  2. Sift the flour and salt into a mixing basin.
  3. Add the Crisco, cut into pieces approximately one inch square, to the sifted flour and salt.
  4. Beat the egg, and add lemon juice and a small amount of cold water to it.
  5. Gradually incorporate the egg mixture into the flour and Crisco, forming a stiff paste.
  6. Roll out the pastry on a floured board, creating a long piece.
  7. Fold the pastry into three sections, turn it with the rough edges facing you, and roll it out again.
  8. Repeat the rolling, folding, and turning process for a total of five times, allowing the pastry to rest for about ten minutes between each cycle.
  9. After the final rolling, Rough Puff Pastry is ready to be used for both sweet and savory pies.
  10. The pastry can be used immediately or allowed to stand in a cool place for a few hours to enhance its flavor and texture.
  11. Bake the pies in a hot oven until they achieve a golden hue.
