PREP: 20 MIN.
COOK: 30 MIN.
MAKES: ABOUT 5 DOZEN
INGREDIENTS
- 2 eggs
- 2 teaspoons sugar
- 1 cup 2% milk
- 3 teaspoons vanilla extract
- 1 cup all-purpose flour
- ¼ teaspoon salt
- Oil for deep-fat frying
FOR ICING:
- 2 cups confectioners’ sugar
- 1 teaspoon vanilla extract
- 1 to 3 tablespoons water
INSTRUCTIONS
- In a small bowl, beat the eggs and sugar together. Stir in the milk and vanilla extract. Gradually add the flour and salt to the batter, stirring until smooth.
- Heat 2½ inches of oil to 375°F (190°C) in a deep-fat fryer or electric skillet. Place the rosette iron in the hot oil to preheat.
- Dip the preheated rosette iron three-fourths of the way into the batter, ensuring that the batter does not overflow the top of the iron. Immediately place the iron with the batter into the hot oil. Use a fork to loosen the rosette from the iron and remove it from the oil.
- Fry the rosette for 1-2 minutes on each side, or until it turns golden brown. Once fried, remove the rosette from the oil and place it on paper towel-lined wire racks to drain excess oil. Repeat the process with the remaining batter.
- In a separate bowl, prepare the icing by combining the confectioners’ sugar, vanilla extract, and enough water to achieve a dipping consistency.
- Dip the edges of the cooled rosettes into the icing, allowing any excess to drip off. Place the iced rosettes on wire racks and let them dry.
Enjoy the delicate and crispy rosettes as a special treat or as a beautiful addition to your holiday dessert table. These delightful pastries are sure to impress with their intricate designs and delightful flavors.
