Roasted cauliflower with Tahini sauce

Serves: 6

 

INGREDIENTS:

  • 1/4 cup extra-virgin olive oil or avocado oil
  • 4 tsp. ground cumin
  • 2 heads cauliflower, cored and cut into 1 1/2” florets
  • Salt and ground black pepper
  • 1/2 cup tahini
  • 3 cloves garlic, smashed and minced into a paste
  • Juice of 1 lemon

 

INSTRUCTIONS:

  1. Preheat oven to 450°F.
  2. In a large bowl, toss cauliflower florets with extra-virgin olive oil (or avocado oil) and ground cumin until evenly coated. Season with salt and ground black pepper to taste.
  3. Spread the cauliflower in a single layer on a baking sheet or roasting pan.
  4. Roast the cauliflower in the preheated oven until tender and lightly browned, stirring occasionally, for about 25-30 minutes.
  5. Meanwhile, prepare the tahini sauce. In a separate bowl, combine tahini, lemon juice, minced garlic paste, and 1/2 cup of water. Stir well to create a smooth sauce. Season with salt to taste.
  6. Once the cauliflower is roasted, remove it from the oven.
  7. Serve the roasted cauliflower hot or at room temperature, drizzled with the tahini sauce.
