INGREDIENTS

  • 2 cups fresh raspberries
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 cups heavy cream
  • 1 cup whole milk
  • 4 large egg yolks
  • 1 teaspoon vanilla extract

 

INSTRUCTIONS

  1. In a blender or food processor, puree the fresh raspberries until smooth. Strain the puree through a fine-mesh sieve to remove any seeds. Set aside.
  2. In a medium saucepan, combine the sugar and lemon juice. Heat over medium heat until the sugar has dissolved, stirring occasionally.
  3. In a separate bowl, whisk together the egg yolks until smooth. Slowly pour the warm sugar mixture into the egg yolks, whisking constantly to prevent the eggs from curdling.
  4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon. This is known as the custard base.
  5. Remove the custard base from heat and stir in the raspberry puree. Mix until well combined.
  6. In a separate saucepan, heat the heavy cream and milk over medium heat until it just begins to simmer. Do not let it boil.
  7. Slowly pour the hot cream mixture into the raspberry custard base, whisking constantly to combine.
  8. Stir in the vanilla extract.
  9. Transfer the mixture to a bowl and cover with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming.
  10. Refrigerate the custard for at least 4 hours or overnight until chilled and thoroughly cooled.
  11. Once the custard is chilled, pour it into an ice cream maker and churn according to the manufacturer’s instructions. This usually takes around 20-25 minutes, or until the ice cream reaches a soft-serve consistency.
  12. Transfer the churned ice cream to an airtight container, smoothing the top with a spatula. Place a piece of plastic wrap directly on the surface of the ice cream before sealing the container with the lid.
  13. Freeze the raspberry ice cream for at least 4 hours or until firm.
  14. Once the ice cream is fully frozenand firm, it is ready to be served.
  15. Scoop the raspberry ice cream into bowls or cones and garnish with fresh raspberries, if desired.
  16. Enjoy the delightful combination of creamy, fruity flavors in each spoonful of raspberry ice cream.
