INGREDIENTS 

  • 1 cup quinoa, rinsed and drained
  • 2 cups water or vegetable broth
  • 1/2 cup sliced almonds, toasted
  • 1/2 cup dried cranberries
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley or cilantro
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey or maple syrup
  • Salt and black pepper to taste

 

INSTRUCTIONS 

  1. In a medium saucepan, combine the quinoa and water or vegetable broth. Bring the mixture to a boil over medium-high heat.
  2. Once the quinoa is boiling, reduce the heat to low, cover the saucepan with a lid, and let the quinoa simmer for about 15-20 minutes, or until the liquid is absorbed and the quinoa is tender.
  3. Remove the saucepan from heat and let the quinoa sit, covered, for an additional 5 minutes. Fluff the quinoa with a fork to separate the grains.
  4. In a large bowl, combine the cooked quinoa, toasted sliced almonds, dried cranberries, finely chopped red onion, and chopped fresh parsley or cilantro.
  5. In a small bowl, whisk together the extra-virgin olive oil, balsamic vinegar, honey or maple syrup, salt, and black pepper. This will be the dressing for the salad.
  6. Pour the dressing over the quinoa mixture in the large bowl, tossing everything gently to ensure the ingredients are coated with the dressing.
  7. Taste the salad and adjust the seasoning with additional salt, black pepper, or a touch more honey/maple syrup, if desired.
  8. Once the salad is well-combined and seasoned to your liking, cover the bowl and refrigerate it for about 30 minutes to allow the flavors to meld.
  9. Just before serving, give the Quinoa Salad with Almonds and Dried Cranberries a final toss to ensure the dressing is distributed evenly.
