Poteca Nut Roll, also known as Potica, is a traditional Slovenian and Eastern European sweet bread. This rich and indulgent pastry is filled with a sweet and nutty mixture, typically made with walnuts. Poteca Nut Roll has a long history and is often enjoyed during holidays and special occasions as a beloved family recipe.

INGREDIENTS

  • 1 package (¼ ounce) active dry yeast
  • ¼ cup warm water (110° to 115°)
  • ¾ cup warm milk (110° to 115°)
  • ¼ cup sugar
  • 1 teaspoon salt
  • 1 egg, lightly beaten
  • ¼ cup shortening
  • 3 to 3½ cups all-purpose flour

 

FOR FILLING:

  • ½ cup butter, softened
  • 1 cup packed brown sugar
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract (optional)
  • 4 cups ground or finely chopped walnuts
  • 2% milk
  • Confectioners’ sugar (optional)

 

INSTRUCTIONS

  1. In a large bowl, dissolve the yeast in warm water. Add the warm milk, sugar, salt, egg, shortening, and 1½ cups of flour. Beat the mixture until smooth. Gradually add enough remaining flour to form a soft dough.
  2. Transfer the dough onto a floured surface and knead it for about 6-8 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, turning it once to grease the top. Cover the bowl and let the dough rise in a warm place until it has doubled in size, approximately 1 hour.
  3. Punch down the dough and turn it onto a lightly floured surface. Roll it out into a large 30×20-inch rectangle.
  4. In a bowl, combine the softened butter, brown sugar, lightly beaten eggs, vanilla extract, lemon extract (if desired), and ground or finely chopped walnuts. Add about ½ cup of milk to reach a spreading consistency. Spread this filling mixture evenly over the dough, leaving a 1-inch border around the edges.
  5. Roll up the dough jelly-roll style, starting with a long side. Pinch the seams and ends to seal. Place the roll on a greased baking sheet and shape it into a tight spiral. Cover the roll and let it rise until nearly doubled in size, about 1 hour.
  6. Preheat the oven to 350°F (175°C). Bake the Poteca Nut Roll in the preheated oven for approximately 35 minutes or until it turns golden brown.
  7. Remove the roll from the pan and place it on a wire rack to cool.
  8. Optional: If desired, combine confectioners’ sugar with enough milk to make a thin glaze. Brush the glaze over the roll for added sweetness and decoration.
