  • 4 bone-in pork chops (about 1 inch thick)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 8 ounces cremini or button mushrooms, sliced
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup bourbon
  • 1/2 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons fresh parsley, chopped (for garnish)

 

INSTRUCTIONS

  1. Season the pork chops generously with salt and black pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the pork chops to the skillet and sear them for about 3-4 minutes on each side, or until they develop a golden brown crust. This initial searing locks in the juices and adds flavor.
  4. Once the pork chops are seared, remove them from the skillet and set them aside on a plate. Cover them loosely with foil to keep them warm.
  5. In the same skillet, add the sliced mushrooms and thinly sliced onion. Sauté them until they become tender and start to brown, usually about 5 minutes.
  6. Stir in the minced garlic and cook for an additional minute until fragrant, being careful not to burn it.
  7. Pour in the chicken broth and bourbon, scraping the bottom of the skillet to release any flavorful browned bits.
  8. Bring the mixture to a simmer and let it cook for about 5 minutes, allowing the alcohol to evaporate and the flavors to meld.
  9. Reduce the heat to low and stir in the heavy cream, Dijon mustard, and Worcestershire sauce. Cook the sauce for another 2-3 minutes, stirring occasionally, until it thickens slightly.
  10. Return the seared pork chops to the skillet, nestling them into the sauce. Let them simmer in the sauce for about 5-7 minutes, or until they reach an internal temperature of 145°F (63°C).
  11. Remove the skillet from heat and let the pork chops rest for a few minutes to allow the juices to redistribute.
  12. Plate the Pork Chops with Mushroom Bourbon Sauce, spooning the sauce over the pork chops. Garnish with freshly chopped parsley for a burst of freshness.
  13. Serve the dish alongside your favorite sides, such as mashed potatoes or roasted vegetables, for a complete gourmet meal.
