INSTRUCTIONS:

  1. Begin by zesting one of the oranges and setting the zest aside. Then, juice both oranges and set the juice aside.
  2. Season the pork chops with salt and pepper on both sides.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and sear them for about 3-4 minutes on each side, until they are nicely browned. Remove the pork chops from the skillet and set them aside.
  4. In the same skillet, add the butter and sliced onion. Sauté the onion until it becomes translucent and begins to caramelize.
  5. Add the minced garlic and thyme leaves to the skillet and sauté for another minute until fragrant.
  6. Deglaze the skillet with the white wine, if using, and allow it to reduce slightly.
  7. Pour in the orange juice and chicken or vegetable broth. Stir to combine and bring the mixture to a gentle simmer.
  8. Return the seared pork chops to the skillet, placing them in the sauce. Cover the skillet and let the pork chops braise in the orange-infused liquid for about 10-15 minutes, or until they are cooked through.
  9. Remove the pork chops from the skillet and keep them warm. Allow the sauce to continue simmering and reducing for a few more minutes until it thickens slightly.
  10. To serve, plate the pork chops and drizzle them with the orange sauce. Garnish with the reserved orange zest and additional fresh thyme leaves.
