Serves :6

 

INGREDIENTS:

  • 3 cups vegetable broth
  • 1 cup brown rice
  • 5 ounces mushrooms
  • Salt and pepper to taste
  • 6 (3/4 inch) thick pork chops

 

INSTRUCTIONS:

  1. Preheat Oven and Prepare Baking Dish:
    • Heat the oven to 350°F (175°C).
    • Pour the vegetable broth into a baking dish.
    • Add the brown rice and mushrooms to the broth and mix them together.
    • Season with salt and pepper to taste.
  2. Add Pork Chops:
    • Place the pork chops in a single layer on top of the rice and mushroom mixture.
    • Gently press the pork chops down into the mixture, ensuring they are partially submerged in the broth.
  3. Cover and Bake:
    • Cover the baking dish with aluminum foil to create a tight seal.
    • Bake the pork chops and rice mixture in the preheated oven for 1 hour, or until the rice is cooked, and the pork chops are tender and fully cooked through.
  4. Serve:
    • Once the dish is cooked, remove it from the oven.
    • Carefully uncover the baking dish to release the steam.
    • Serve the flavorful pork chops and rice with the mushroom mixture on the side.

Here are some variations of the pork chops and rice recipe:

  2. Garlic Butter Rice: In a saucepan, melt some butter and sauté minced garlic until fragrant. Stir in the rice and cook for a minute before adding the vegetable broth. Proceed with the rest of the recipe as usual. The garlic butter rice will enhance the overall taste.
  3. Veggie-Packed Rice: Add more vegetables to the rice mixture, such as diced carrots, bell peppers, or peas. This will add color, nutrients, and extra texture to the dish.
  4. Asian-Inspired Pork Chops: Marinate the pork chops in a mixture of soy sauce, ginger, and garlic before adding them to the baking dish. Serve the pork chops and rice with a side of steamed bok choy or broccoli for an Asian twist.
  5. Cheesy Pork Chops and Rice: After the dish is done baking, sprinkle shredded cheddar or mozzarella cheese on top of the pork chops and rice. Return it to the oven for a few minutes until the cheese melts and becomes bubbly.
  6. Spicy Cajun Pork Chops: Season the pork chops with a Cajun spice blend before placing them in the baking dish. Add some chopped bell peppers and onions to the rice mixture for a flavorful Cajun-inspired meal.
