INGREDIENTS:
- 3 cups vegetable broth
- 1 cup brown rice
- 5 ounces mushrooms
- Salt and pepper to taste
- 6 (3/4 inch) thick pork chops
INSTRUCTIONS:
- Preheat Oven and Prepare Baking Dish:
- Heat the oven to 350°F (175°C).
- Pour the vegetable broth into a baking dish.
- Add the brown rice and mushrooms to the broth and mix them together.
- Season with salt and pepper to taste.
 
- Add Pork Chops:
- Place the pork chops in a single layer on top of the rice and mushroom mixture.
- Gently press the pork chops down into the mixture, ensuring they are partially submerged in the broth.
 
- Cover and Bake:
- Cover the baking dish with aluminum foil to create a tight seal.
- Bake the pork chops and rice mixture in the preheated oven for 1 hour, or until the rice is cooked, and the pork chops are tender and fully cooked through.
 
- Serve:
- Once the dish is cooked, remove it from the oven.
- Carefully uncover the baking dish to release the steam.
