Pomegranate Avocado salad

Serves: 1

 

INGREDIENTS:

  • 1 cup mixed greens (spinach, arugula, red leaf lettuce)
  • 1 ripe avocado, cut into 1/2-inch pieces
  • 1/2 cup pomegranate seeds
  • 1/4 cup pecans
  • 1/4 cup blackberries
  • 1/4 cup cherry tomatoes
  • Olive oil or avocado oil
  • Salt
  • Lemon juice

 

INSTRUCTIONS:

  1. In a salad bowl, combine the mixed greens, pecans, diced avocado, cherry tomatoes, pomegranate seeds, and blackberries.
  2. In a separate small bowl, whisk together olive oil or avocado oil, a pinch of salt, and freshly squeezed lemon juice to make the dressing.
  3. Pour the dressing over the salad ingredients and toss gently to ensure everything is coated evenly.
  4. Serve immediately as a refreshing and nutritious salad option. Enjoy!
