INGREDIENTS

For the Pudding:

  • 1 can pineapple
  • 1 cupful sugar
  • 4 tablespoonfuls melted Crisco (vegetable shortening)
  • 1 cupful breadcrumbs
  • 1/4 teaspoonful salt
  • 6 eggs

 

For the Sauce:

  • 4 tablespoonfuls sugar
  • 1/2 teaspoonful salt
  • 1/2 cupful Crisco (vegetable shortening)
  • 2 tablespoonfuls sherry
  • 4 tablespoonfuls blanched and chopped almonds

 

INSTRUCTIONS

For the Pudding:

  1. Preheat your oven to a moderate temperature.
  2. Drain the canned pineapple and cut it into small dice.
  3. In a mixing bowl, beat the eggs until well combined.
  4. Add the breadcrumbs, salt, melted Crisco, and sugar to the beaten eggs. Mix thoroughly.
  5. Gently fold in the diced pineapple to distribute it evenly throughout the mixture.
  6. Grease a pudding dish with Crisco and pour the mixture into it.
  7. Bake the pudding in the preheated oven until it becomes firm and golden on top.
  8. Once baked, remove the pudding from the oven and allow it to cool slightly.

 

For the Sauce:

  1. In a separate bowl, beat the Crisco and sugar together until creamy.
  2. Add the salt, sherry, and blanched and chopped almonds to the mixture. Stir until well combined.

 

To Serve:

  1. Slice portions of the Pineapple Pudding and place them on serving plates.
  2. Drizzle the luscious sauce over each serving of pudding.
  3. Optionally, you can garnish with additional chopped almonds or a sprinkle of powdered sugar.
