- 6 large egg whites
- 1¾ plus 2 tbsp. granulated sugar
- 1½ cups (3 sticks) unsalted butter, at room temperature
- 4 tsp. peppermint extract
- 1-2 tsp. vanilla extract
- Red gel food coloring (optional for the red swirls)
INSTRUCTIONS
Cupcakes:
- Preheat the oven to 350°F (175°C). Line two cupcake pans with paper liners.
