INGREDIENTS
- 2 ounces thick-sliced bacon, finely chopped
- 2 tablespoons extra-virgin olive oil
- 1 small red onion, finely chopped
- 1 teaspoon finely chopped fresh rosemary
- 1 garlic clove, finely chopped
- 3 cups diced peeled butternut squash
- ¼ cup water
- Salt and freshly ground pepper
- 8 ounces penne
- ⅔ cup freshly grated Parmigiano-Reggiano
INSTRUCTIONS
- In a skillet large enough to hold all the ingredients, cook the bacon in the olive oil over medium heat until lightly golden, about 5 minutes.
- Add the onion and rosemary to the skillet. Cook for 8 minutes, or until the onion is tender.
- Stir in the garlic and cook for 1 minute.
- Add the squash, water, and salt and pepper to taste. Stir well, cover the pan, and cook, stirring occasionally, for 15 to 20 minutes, until the squash is tender and starting to brown. If it begins to stick, add another tablespoon or two of water. Mash some of the squash with the back of a spoon until creamy.
- Meanwhile, bring a large pot of salted water to a boil. Add the pasta, stir well, and cook, stirring often, until al dente. Reserve some of the pasta cooking water and set it aside. Drain the pasta.
- Add the drained pasta to the skillet with the squash mixture. Add a little of the reserved cooking water and stir well. Cook, stirring, for 1 minute to coat the pasta.
- Stir in the grated cheese.
- Serve immediately.
