The gritty-textured pear makes it a perfect fruit for granita making, not only in terms of texture, but in subdued flavor as well.

Pears for Health

Pears are rich in fiber and a source of vitamin C, a proven antioxidant. They also contain potassium and contain only around 100 calories. They’re quite a healthy snack!

YIELD: 1 QUART

 

INGREDIENTS 

  • 1¾ cups water
  • 2 cups sugar
  • 3–4 large very ripe pears, peeled and chopped
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla

 

PREPARATION

  1. Combine the water and sugar in a saucepan over medium-low heat until the sugar is completely dissolved.
  2. Remove from heat, and combine with the remaining ingredients. Purée in a food processor or blender until smooth.
  3. Refrigerate until chilled.
  4. Pour into a covered container and place in the freezer for 1 hour.
  5. Remove from the freezer, and stir the frozen crystals into the center of the container with a fork.
  6. Return the container to the freezer, and repeat the process every 30–45 minutes, stirring carefully each time, until you have a fully frozen container of crystallized granita.
