  • 1 quart flour
  • 3 teaspoonfuls baking powder
  • 2 tablespoonfuls sugar
  • 1/2 cupful Crisco (shortening)
  • 1/2 teaspoonful salt
  • Milk
  • 1 egg
  • 1 teaspoonful lemon extract
  • Peaches, fresh or canned
  • Whipped cream

 

INSTRUCTIONS

  1. Prepare the dough: Sift together the flour, salt, sugar, and baking powder in a mixing bowl. Lightly rub the Crisco into the dry ingredients using your fingertips.
  2. Add wet ingredients: In a separate bowl, beat the egg and add lemon extract. Gradually add enough milk to create a soft dough. Mix until well combined.
  3. Shape the delights: Grease gem pans with Crisco. Drop spoonfuls of the dough into the pans, creating a base for each peach.
  4. Place the peaches: Place half of a peach, cut side up, onto each dough base in the pans.
  5. Sweeten the peaches: Fill the cavity of each peach with a sprinkling of sugar.
  6. Bake: Preheat the oven to a hot temperature. Bake the peach delights in the oven for approximately twenty-five minutes, or until the dough is golden and cooked through.
  7. Serve: Once baked, remove the peach delights from the oven. Serve them with a dollop of whipped and sweetened cream on top, enhancing the flavors and textures.
