INGREDIENTS 

FOR THE PEACH FILLING:

  • 6 cups fresh or frozen peaches, peeled, pitted, and sliced (about 6-8 peaches)
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • Pinch of salt

 

FOR THE COBBLER TOPPING:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/4 cup boiling water

 

FOR SERVING:

  • Vanilla ice cream or whipped cream (optional)

 

INSTRUCTIONS 

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the sliced peaches, granulated sugar, cornstarch, vanilla extract, ground cinnamon (if using), and a pinch of salt. Toss the mixture gently to coat the peaches evenly. Let the mixture sit for about 15-20 minutes to allow the flavors to meld and the juices to release.
  3. Transfer the peach filling to a 9×13-inch baking dish, spreading it out in an even layer.
  4. In a separate mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  5. Add the cold cubed butter to the dry ingredients. Using a pastry cutter or your fingertips, work the butter into the flour mixture until it resembles coarse crumbs.
  6. Pour the boiling water into the flour-butter mixture and stir just until the dough comes together.
  7. Drop spoonfuls of the cobbler topping over the peach filling, covering as much of the surface as possible.
  8. Place the baking dish in the preheated oven and bake for about 35-40 minutes, or until the topping is golden brown and the peach filling is bubbly.
  9. Once the Peach Cobbler is baked to perfection, remove it from the oven and let it cool slightly.
  10. Serve the warm Peach Cobbler on individual plates, optionally accompanied by a scoop of vanilla ice cream or a dollop of whipped cream.
