Pasta with (Turkey) Sausage and Pepper Meatballs

INGREDIENTS:

  • 1 lb Rigatoni, Ziti, or other medium pasta shape, uncooked

 

MEATBALLS:

  • 8 oz lean ground beef
  • 8 oz turkey sausage, casings removed
  • 1/2 cup minced onion (1 small)
  • 1/2 cup diced red bell pepper (1/2 medium)
  • 2 large egg whites
  • 1 1/2 cups fresh bread crumbs (about 3 slices)
  • 2 Tbs minced fresh parsley
  • 1 tsp fennel seeds
  • 1/2 tsp salt
  • 1/4 tsp pepper

 

SAUCE:

  • 1 tsp vegetable oil, divided

 

INSTRUCTIONS:

  1. In a medium bowl, combine all the meatball ingredients. Knead the mixture with your hands until it becomes smooth. To prevent sticking, dip your hands into cool water before forming each meatball. Form the mixture into 30 meatballs, each about 1 1/2 inches in size.
  2. Pour the tomato sauce into a large, heavy-bottom saucepan and bring it to a simmer over low heat.
  3. Warm 1/2 teaspoon of vegetable oil in a large non-stick skillet. Add half of the meatballs to the skillet and brown them on all sides. Once browned, spoon the meatballs into the tomato sauce. Repeat with the remaining half of the meatballs, browning them in the skillet before adding them to the sauce.
  4. Simmer the sauce with the meatballs, stirring occasionally, for 20 minutes.
  5. While the sauce is simmering, prepare the pasta according to the package directions. Drain the cooked pasta and transfer it to a large serving bowl.
  6. Remove the bay leaves from the sauce and pour the sauce with meatballs over the cooked pasta.
  7. Serve the delicious meatball and pasta dish immediately and enjoy!
