Pasta With Asparagus And Shrimp

INGREDIENTS:

  • 1 cup White wine
  • 1 lb Pasta; Linguini
  • 1 1/2 lb Fresh asparagus
  • 16 Jumbo shrimps with shells
  • 4 Tbs Cooking oil; best olive oil
  • 1 cup Heavy cream
  • 4 Bacon strips, cut into 2″
  • 2 Tbs Fresh chives

 

INSTRUCTIONS:

  1. Cook bacon until it is half crispy. Set aside and drain the fat out of the pan.
  2. In the same pan, add the heavy cream and cook over medium-high heat until it’s reduced by half. Add the cooked bacon back into the pan. Once done, set the pan aside.
  3. In a separate frypan, add enough oil to cover the surface and heat until a few drops start to spit.
  4. Add the jumbo shrimp to the frypan and cook until the shells turn pink and the shrimp just begin to lose their transparency. Turn the shrimp once and remove them to a plate to cool.
  5. Peel off the shrimp shells and place the shrimp back in the pan. Add the white wine and cook on low heat, simmering until there is just 1/4 cup of liquid remaining.
  6. Add the reduced cream and shrimp back to the pan and set it aside.
  7. Peel the asparagus and cut it into 1/2-inch size pieces. Steam or blanch the asparagus until tender. Drain and rinse it with very cold water, then wrap it in a towel to dry.
  8. In a large pot, bring water to a boil, and add the linguini pasta with a dash of salt and oil. Cook the pasta until it is done or to your taste. Drain the pasta and toss it in a little butter.
  9. Reheat the cream with shrimp and add the asparagus. Season the sauce to taste.
  10. Mix the cooked pasta and the sauce together.
  11. Sprinkle fresh chives on top and serve the dish with warm crusty bread.
