Servings: 4

 

INGREDIENTS:

  • 3/4 lb Smoked salmon, cut in strips
  • 2 quarts Water
  • 3/4 lb Linguini or spaghetti, dry
  • 2 Tbs White vinegar
  • 1/2 cup Onion, finely chopped
  • 1 cup Whipping cream
  • 3/4 cup Dry white wine
  • 1 Tbs Dijon mustard
  • 1/4 cup Grated parmesan
  • 1/2 cup Fresh parsley sprigs

 

INSTRUCTIONS:

  1. Bring water to a boil and cook pasta until tender; drain.
  2. While pasta is cooking, boil vinegar with chopped onion in a frying pan over high heat until the vinegar evaporates (about 2 minutes).
  3. Add cream, white wine, and Dijon mustard to the pan. Boil, uncovered, stirring often, until the sauce is reduced to approximately 3/4 cup.
  4. Add the hot drained pasta to the sauce and lift with forks to coat the pasta evenly.
  5. Divide the pasta and sauce evenly among 4 dinner plates.
  6. Sprinkle each serving with 1 tablespoon of grated parmesan.
  7. Arrange smoked salmon beside each serving of pasta and garnish with fresh parsley.
  8. Season with salt and pepper to taste.

  • Steam some fresh asparagus spears and add them to the pasta along with the smoked salmon. This adds a pop of color and a delicious vegetable to the dish.

7. Salmon and Mushroom Pasta:

  • Saute some sliced mushrooms in butter or olive oil until they are tender and add them to the pasta along with the salmon.
