INGREDIENTS:

  • 1 lb Spaghetti, linguini, or other pasta of your choice
  • 2 cans Peeled Italian tomatoes
  • 1/4 cup Olive oil
  • 1 tsp Oregano
  • 1/8 tsp Dried red pepper flakes
  • 1/2 cup Tiny black Nicoise olives
  • 1/4 cup Drained capers
  • 4 cloves Garlic, peeled and minced
  • 8 Anchovy fillets, chopped
  • 1/2 cup Chopped parsley
  • 2 Tbs Salt

 

INSTRUCTIONS:

  1. COOK THE PASTA: Bring 4 quarts of water to a boil in a large pot. Add 2 tablespoons of salt and stir in the spaghetti or pasta of your choice. Cook the pasta according to the package instructions until tender but still firm. Drain the cooked pasta and transfer it to heated plates or a serving dish.
  2. PREPARE THE SAUCE: While the pasta is cooking, drain the Italian tomatoes and cut them crosswise into halves. Squeeze out as much liquid as possible from the tomatoes.
  3. MAKE THE SAUCE: In a skillet, combine the tomatoes and olive oil. Bring the mixture to a boil over medium-high heat. Keep the sauce at a full boil.
  4. ADD THE INGREDIENTS: To the boiling sauce, add the oregano, dried red pepper flakes, tiny black Nicoise olives, drained capers, minced garlic, and chopped anchovy fillets one at a time. Stir the sauce frequently as you add each ingredient.
  5. COOK THE SAUCE: Reduce the heat to medium-low and continue to cook the sauce for a few minutes until it thickens to your desired consistency. Stir the sauce occasionally to ensure it cooks evenly and all the flavors are combined.
  6. SERVE THE PASTA: Pour the prepared sauce over the hot cooked pasta and toss gently to coat the pasta evenly with the sauce.
  7. GARNISH: Garnish the pasta with the chopped parsley.
  8. SERVE IMMEDIATELY: Serve the pasta with the flavorful sauce immediately while it’s still hot. Enjoy your delicious Italian-style pasta dish!
