Pacific Rim Salmon is a flavorful and vibrant dish inspired by the culinary traditions of the Pacific Rim region. This recipe combines the rich taste of salmon with a tangy and aromatic marinade, creating a delightful fusion of flavors. The marinade features ingredients like pineapple juice, soy sauce, horseradish, sesame oil, and honey, which complement the natural richness of the salmon.

The Pacific Rim refers to the geographic area encompassing countries and regions that border the Pacific Ocean, including countries such as Japan, China, Thailand, Korea, and the Pacific Northwest region of the United States. This region is known for its diverse and dynamic culinary traditions, combining unique flavors, techniques, and ingredients.

Pacific Rim Salmon reflects the essence of this culinary fusion, combining the succulent and buttery texture of salmon with a marinade that incorporates elements from various Pacific Rim cuisines. The sweet and tangy pineapple juice, savory soy sauce, and aromatic sesame oil infuse the salmon with a delightful blend of flavors.

INGREDIENTS

  • ½ cup unsweetened pineapple juice
  • ¼ cup reduced-sodium soy sauce
  • 2 tablespoons prepared horseradish
  • 2 tablespoons minced fresh parsley
  • 5 teaspoons sesame oil, divided
  • 2 teaspoons honey
  • ½ teaspoon coarsely ground pepper
  • 8 salmon fillets (6 ounces each)
  • 5 green onions, coarsely chopped

 

INSTRUCTIONS

  1. In a small bowl, combine the pineapple juice, soy sauce, horseradish, minced parsley, 3 teaspoons of sesame oil, honey, and coarsely ground pepper. Pour ⅔ cup of the marinade into a large resealable plastic bag. Add the salmon fillets and chopped green onions to the bag. Seal the bag and turn it to coat the salmon evenly. Refrigerate the bag for 1 to 1½ hours, turning the bag occasionally. Reserve the remaining sesame oil and marinade for basting.
  2. Drain and discard the marinade from the bag. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack to prevent sticking.
  3. Grill the salmon fillets, skin side down, covered, over medium heat or broil them 4 inches from the heat for 8-12 minutes, or until the fish flakes easily with a fork. Baste the salmon frequently with the reserved marinade during the cooking process to enhance the flavor and moisture.
