  • 800ml vegetable stock
  • 250g linguine pasta
  • 1 onion, sliced
  • 1/2 broccoli, broken into florets
  • 250g bacon, chopped
  • 150g peas
  • 1 clove garlic, crushed
  • 40g Perfect Italiano™ Parmesan, shaved (plus extra to serve)

 

INSTRUCTIONS

  1. In a large heavy pot, combine all ingredients except the Perfect Italiano™ Parmesan.
  2. Place the pot on the stove over medium heat.
  3. Bring the mixture to a boil, allowing the flavors to meld together.
  4. Once boiling, start tossing the ingredients in the pot using tongs or a spoon. Continue tossing for 7-8 minutes to ensure even cooking.
  5. Add the shaved Perfect Italiano™ Parmesan to the pot. Continue cooking for an additional 1-2 minutes, allowing the cheese to melt into the sauce.
  6. Throughout the cooking process, monitor the pasta and vegetables to achieve the desired level of tenderness.
  7. Once the linguine pasta and vegetables are cooked to your liking and the sauce has thickened slightly, remove the pot from heat.
  8. Allow the pasta to sit in the pot for a couple of minutes. During this time, the linguine will absorb some of the excess stock, enhancing its flavors.
  9. Season the dish with salt and pepper to taste, adjusting the seasoning according to your preferences.
  10. To serve, transfer the creamy bacon and broccoli linguine to individual plates or a serving platter.
  11. Generously sprinkle extra Perfect Italiano™ Shaved Parmesan over the top of each portion, adding an irresistible final touch.
