Omelet with Superfoods veggies

Serves :1

 

INGREDIENTS:

  • 2 large eggs
  • Salt
  • Ground black pepper
  • 1 tsp. olive oil or cumin oil
  • 1 cup spinach
  • Cherry tomatoes
  • 1 spoon of yogurt cheese
  • Crushed red pepper flakes (optional)
  • Pinch of dill (optional)

 

INSTRUCTIONS:

  1. Whisk 2 large eggs in a small bowl. Season with salt and ground black pepper and set aside.
  2. Heat 1 tsp. olive oil in a medium skillet over medium heat.
  3. Add baby spinach and cherry tomatoes to the skillet and cook, tossing, until wilted (Approx. 1 minute).
  4. Add the eggs to the skillet and cook, stirring occasionally, until just set, about 1 minute.
  5. Stir in the yogurt cheese to incorporate it with the eggs and veggies.
  6. Sprinkle with crushed red pepper flakes and dill for added flavor (optional).
  7. Serve the omelet warm and enjoy as a delicious and nutritious breakfast or brunch option.

Here are a few variations of the omelet recipe:
