INSTRUCTIONS:
- Whisk 2 large eggs in a small bowl. Season with salt and ground black pepper and set aside.
- Heat 1 tsp. olive oil in a medium skillet over medium heat.
- Add baby spinach and cherry tomatoes to the skillet and cook, tossing, until wilted (Approx. 1 minute).
- Add the eggs to the skillet and cook, stirring occasionally, until just set, about 1 minute.
