Omelet with Leek

Serves :1 

 

INGREDIENTS:

  • Leeks
  • Coconut oil
  • Eggs

 

INSTRUCTIONS:

  1. Slice the leeks into thin rounds, using both the white and light green parts.
  2. In a non-stick skillet or frying pan, heat a small amount of coconut oil over medium heat.
  3. Add the sliced leeks to the skillet and cook them until they become soft and slightly translucent, stirring occasionally. This should take about 5-7 minutes.
  4. While the leeks are cooking, beat the eggs in a separate bowl until well combined.
  5. Once the leeks are soft, pour the beaten eggs over them in the skillet.
  6. Stir the mixture gently to combine the leeks and eggs, making sure the eggs are evenly distributed.
  7. Continue to cook the leeks and eggs, stirring occasionally, until the eggs are fully cooked and set.
  8. Once the eggs are cooked to your desired doneness, remove the skillet from the heat.
  9. Serve the leeks and eggs warm as a delicious and nutritious breakfast or brunch option. You can also add some salt and pepper to taste, or garnish with fresh herbs if desired. Enjoy!
