Ingredients:

  • 3 cups old-fashioned oats
  • 1 cup unsweetened coconut flakes

  • 1/2 cup coconut oil, melted
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup dried fruit (such as raisins, cranberries, or cherries), optional

Instructions:

  1. Preheat the oven to 300°F (150°C). Line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine the oats, coconut flakes, and mixed nuts.
  3. In a separate small mixing bowl, whisk together the melted coconut oil, honey, vanilla extract, and salt until well combined.
  4. Pour the liquid mixture over the dry ingredients in the large mixing bowl and stir until the dry ingredients are evenly coated.

  6. Bake for 25-30 minutes, stirring every 10 minutes, until the granola is golden brown and fragrant.
  7. Remove the granola from the oven and let it cool completely on the baking sheet.
  8. Once cooled, add the dried fruit, if using, and stir to combine.
  9. Store the granola in an airtight container for up to two weeks. Serve with yogurt, milk, or as a snack on its own.
