INGREDIENTS

  • 4 tablespoonfuls Crisco (shortening)
  • 14 large mushrooms
  • 1 egg
  • Salt, pepper, and red pepper to taste
  • 1 tablespoonful chopped parsley
  • 2 tablespoonfuls chopped cooked meat
  • 2 tablespoonfuls breadcrumbs
  • 1/2 cupful stock
  • 1 tablespoonful chopped suet

 

INSTRUCTIONS

  1. Begin by preparing the stuffing. In a bowl, beat the egg and add chopped suet, breadcrumbs, chopped cooked meat, chopped parsley, and seasonings (salt, pepper, and red pepper). Mix these ingredients thoroughly to create a flavorful stuffing.

 

For Preparing the Mushrooms:

  1. Wash the mushrooms and carefully remove the centers to create a cavity for the stuffing. Reserve the mushroom centers for other culinary uses.
  2. Season the mushroom caps with salt, pepper, and red pepper. Place a tiny piece of Crisco in each mushroom cap.
  3. Fill each mushroom cap with a heaping teaspoonful of the prepared stuffing, ensuring that the cavity is filled evenly.
  4. Once stuffed, cover the top of each mushroom cap with a layer of breadcrumbs, creating a gratin-style topping.

 

For Baking:

  1. Preheat the oven to a moderate temperature.
  2. Grease a baking tin with Crisco to prevent sticking.
  3. Arrange the stuffed and breadcrumb-topped mushroom caps in the Criscoed baking tin.
  4. Pour the stock into the baking tin, surrounding the mushroom caps. This will help create a moist environment for baking.
  5. Bake the Mushrooms au Gratin in the preheated oven for approximately fifteen minutes, or until the mushroom caps are tender and the gratin topping is golden brown and crispy.

 

To Serve:

  1. Once baked to perfection, remove the Mushrooms au Gratin from the oven.
  2. Serve the mushrooms on a hot dish, with the savory gratin topping showcasing a rich golden hue.
  3. Pour gravy around the mushrooms, enhancing their flavors and providing an inviting sauce.
