Monica Pudding, named after the revered Saint Monica, holds a special place in the realm of desserts. INGREDIENTS

For the Pudding:

  • 3 tablespoonfuls melted Crisco (vegetable shortening)
  • 2 cupfuls milk
  • 1/2 cupful flour
  • 3 eggs (separated into yolks and whites)
  • 1/4 cupful sugar
  • 1/4 teaspoonful salt
  • 1/2 teaspoonful vanilla extract

 

For the Sauce:

  • 1/4 cupful Crisco (vegetable shortening)
  • 1/2 cupful powdered sugar
  • 1/2 cupful cream
  • 1/2 teaspoonful vanilla extract

 

INSTRUCTIONS

For the Pudding:

  1. Preheat your oven to a moderate temperature.
  2. In a saucepan, heat 1 cupful of milk until it is nearly boiling.
  3. Gradually add the remaining cupful of milk to the flour, stirring to create a smooth mixture.
  4. Slowly pour the flour mixture into the hot milk, stirring constantly. Cook over medium heat for about five minutes, or until the mixture thickens and becomes smooth.
  5. Remove the saucepan from the heat and stir in the melted Crisco.
  6. In a separate bowl, whisk together the egg yolks, sugar, and salt until well combined.
  7. Gradually add the egg yolk mixture to the pudding mixture, stirring constantly.
  8. Stir in the vanilla extract.
  9. In another bowl, beat the egg whites until stiff peaks form.
  10. Gently fold the beaten egg whites into the pudding mixture to create a light and airy texture.
  11. Grease a baking dish with Crisco and pour the pudding mixture into it.
  12. Place the baking dish in a larger pan filled halfway with boiling water.
  13. Bake the pudding in the preheated oven for approximately 35 minutes, or until the top is golden and the pudding is set.
  14. Once baked, remove the pudding from the oven and let it cool slightly.

 

For the Sauce:

  1. In a saucepan, melt the Crisco over medium heat.
  2. Stir in the powdered sugar and cream, mixing until well combined.
  3. Bring the mixture to a gentle boil, stirring constantly.
  4. Remove from heat and stir in the vanilla extract.

 

To Serve:

  1. Slice portions of the Monica Pudding and place them on individual serving plates.
  2. Drizzle the warm sauce over each serving of pudding.
  3. Optionally, you can garnish with a dusting of powdered sugar or a touch of grated nutmeg.
