INGREDIENTS

  • 2 cups Ritz Crackers, coarsely crushed
  • 1 3/4 cups water
  • 1 1/4 cups granulated sugar
  • 2 teaspoons cream of tartar
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 unbaked pie crusts (store-bought or homemade)
  • Whipped cream or vanilla ice cream for serving (optional)

 

INSTRUCTIONS

  1. Preheat the oven to 425°F (220°C).
  2. In a medium saucepan, combine the water, granulated sugar, cream of tartar, lemon juice, and lemon zest. Bring the mixture to a boil over medium heat, stirring occasionally.
  3. Once the mixture reaches a boil, reduce the heat to low and add the coarsely crushed Ritz Crackers. Gently stir until the crackers are thoroughly coated and softened, resembling the texture of cooked apples.
  4. Remove the saucepan from the heat and let the mixture cool for a few minutes.
  5. Roll out one of the pie crusts and place it into a 9-inch pie dish, pressing it against the bottom and sides.
  6. Pour the mock apple filling into the prepared pie crust, spreading it evenly.
  7. Drizzle the melted butter over the filling and sprinkle the ground cinnamon and nutmeg on top.
  8. Roll out the second pie crust and cut it into strips to create a lattice pattern on the pie. Alternatively, you can place the whole pie crust on top and cut a few slits to allow steam to escape.
  9. Crimp the edges of the pie crust together to seal the pie.
  10. Place the pie in the preheated oven and bake for about 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
  11. Once baked, remove the pie from the oven and let it cool on a wire rack for at least 1 hour before serving.
  12. Serve the Mock Apple Pie warm or at room temperature. Optional: Top with whipped cream or vanilla ice cream for an extra touch of indulgence.
