Mixed Vegetable Soufflé presents a harmonious blend of various cooked vegetables, elevated into a delightful culinary creation. Soufflés are a classic in French cuisine, celebrated for their light and airy texture. Their history traces back to 18th-century France, and they have since become a staple in culinary traditions around the world. Mixed Vegetable Soufflé takes this concept and applies it to a medley of cooked vegetables, providing a delightful twist on the traditional sweet or savory soufflé. This dish celebrates the versatility of vegetables and the art of turning them into an impressive and delicious centerpiece.

 

 

INGREDIENTS

  • 1 tablespoonful Crisco (shortening)
  • 1/4 lb. cooked carrots
  • 1/2 lb. boiled potatoes
  • 3/4 lb. boiled turnips
  • 1/2 lb. stewed onions
  • 1 tablespoonful chopped parsley
  • Salt and pepper to taste
  • 3 eggs

 

INSTRUCTIONS

  1. Begin by chopping the stewed onions and mashing the cooked carrots, boiled potatoes, and boiled turnips.
  2. In a mixing bowl, combine the chopped onions, mashed vegetables, and chopped parsley.
  3. Add the Crisco to the mixture along with the desired amount of salt and pepper for seasoning.
  4. Separate the egg yolks from the egg whites.
  5. Add the egg yolks to the vegetable mixture and mix everything well to incorporate the flavors.
  6. In a separate bowl, beat the egg whites until they form stiff peaks.
  7. Gently fold the beaten egg whites into the vegetable mixture. This step adds lightness and volume to the soufflé.
  8. Grease a fireproof dish with Crisco to prevent sticking.
  9. Transfer the prepared vegetable mixture into the greased dish.
  10. Bake the soufflé in a moderate oven for approximately thirty minutes. The baking process will cause the soufflé to rise and become golden brown on top.
  11. Once the soufflé is baked, remove it from the oven and serve it immediately while it’s puffed and airy.
